- Salmon fillet
- Basil pesto – please see next post for recipe.
- Create a foil parcel, and place the salmon fillet in the middle.
- Season with cracked salt and pepper, before adding a generous helping of pesto.
- Oven cook for around 10 mins at 180 degrees Celsius.
- When the salmon has about 5 minutes left, boil the veg.
- Take the salmon out of the foil, cover with some of the juice from the cooked pesto, add veg and serve.
