Pesto Salmon & Veg


Ingredients:

  • Salmon fillet
  • Basil pesto – please see next post for recipe.
  • Carrots 
  • Broccoli
  • Cauliflower 

Method:

  1. Create a foil parcel, and place the salmon fillet in the middle.
  2. Season with cracked salt and pepper, before adding a generous helping of pesto.
  3. Oven cook for around 10 mins at 180 degrees Celsius. 
  4. When the salmon has about 5 minutes left, boil the veg.
  5. Take the salmon out of the foil, cover with some of the juice from the cooked pesto, add veg and serve.
